Whilst D and I were grocery shopping, we decided to make dinner every night this week instead of taking the easy road and eating frozen or take out.
We’re two days in, and things are awesome so far. Mainly because Homemade Dinner Week is turning into Leftover Lunch week.
Last night’s Spinach and Ricotta Stuffed Shells were just as fantastic heated up at lunchtime and I can’t even tell you how much I’m looking forward to tomorrow’s lunch of Hearty Turkey Sausage Chili.
Gets me thinking about cooking and how much I enjoy making something out of a pile of separate ingredients. In no way am I talented enough to call myself a chef – although I may be guilty of hosting an impromptu kitchen cooking show every once and a while – but everything that I make is edible and usually pretty tasty.
So we’re all set up with some pretty awesome multi ingredient savoury meals for our week of home cooking. I am trying not to think too forward and say this is going to happen every week… but just like my chin up effort, I’m taking things one day at a time.
Wednesday: Cheesy Shepherd’s Pie
Thursday: Pork and Sweet Potato Skillet
Friday: Avocado Grilled Cheese Sandwiches
Saturday: Tasty Leftover Saturday
Sunday: Cheesy Chicken Quesadillas
